La Comandanta's chiltepín is hand-harvested by Tehuima Indigenous people in the Sierra of Sonora, making it wild and 100% agroecological.
It's known as Red Gold because of its great value and price. For its seed to germinate, it needs a bird to eat it and spread it across the desert. Additionally, its collection is an important economic activity for the region's Indigenous communities.
Usage Recommendations:
With great versatility and strength, it can be used sprinkled, in sauces, in pasta, or simply ground with salt.
Ideal for preparing spicy salsas, crushed for aguachiles, or to cook sweet and sour or savory sauces for chicken, pork, or shrimp.
Traditionally, it is used in pozole, beef stews, menudo, machaca, and meatballs. But if you enjoy bold flavors, you can make or enhance orange, apricot, quince, or apple marmalades.
